Orzo Pasta Salad Ingredients:
1 pound Orzo (pasta that looks like rice)
4 quarts of low sodium chicken broth
1 bottle of Zesty Italian Salad dressing
1 pint of Grape tomatoes
1 can of sliced black olives
2 cups of shredded mild cheddar cheese
1 zucchini

Steps:
1. In a stock pot put the chicken broth in and bring to a boil
2. While the broth is coming to a boil, dice the zucchini into small cubes
3. Once the broth boils, add the orzo and cook per instructions
4. Drain the orzo and set aside to cool to room temperature
5. Once orzo cools, in a large bowl add all ingredients except cheddar cheese
6. Mix well and top with the cheese
7. Cover with plastic wrap and chill in refrigerator for at least 2 hours
